Télessy I.: About therapy of gluten-sensitive individuals

Gluten-induced diseases are fundamentally different from lactose-related intolerance. The concept of therapy is different as well. While lactase supplementation increases splitting of the disaccharide into glucose and galactose in a dose-dependent manner, this relationship is not transmissible to glutenases. In case of glutenases the inactivation of ingested immunogene peptides of gluten and related molecules is the main therapeutic target. The in Hungary recently marketed AN-PEP is able to decrease glutene-load of the small intestine but does not ensure total defense for gluten-sensitive individuals eating gluten-containing food.
